Wow, we are already in to 2010! Time flies when you have kids and a really busy life. I wouldn't trade most of it for the world but I would like to slow it down a bit.
One of my resolutions this year is to cook more. My family deserves more home-made meals of substance and I really want to be able to give it to them. It will take some learning because in general I'm not a good cook and they don't like most of what I fix. And it will take some serious organizing. With a schedule like ours you really have to plan ahead and have what you need ready and waiting.
My first meal of the year was Chicken and Dumplings and they were a success! I found a recipe on recipezaar.com that claimed these dumplings would taste like Cracker Barrel. I must say, they were really good dumplings and I think the trick was to use butter-flavored shortening (Crisco) and buttermilk. I also spent the time necessary to make a really good chicken broth with carrots, celery and Paula Dean's House Seasoning, not just a boiled chicken. (I'm patting myself on the back right now) We stretched this meal into two days and not one complaint from the boys!
I followed this up today with a crockpot dish since it was time for me to go back to work. I was planning barbecue pork ribs. But.....hadn't planned to be out of barbecue sauce! So I headed to recipezaar.com again and while I was looking for instructions on making sauce from scratch I ran across a sauce with some really interesting ingredients that I just happened to have. I haven't had time for that all-important organizing part of this plan so I guess I better go see what is available for tomorrow.... ;-)
